Freeze a granite slab or ceramic plate and place on top of blue ice packs. Then arrange the chocolate and serve. We place a flowing fabric under the granite, on top of dry ice for many hours of chilled servings. We have special display pyramids for weddings. To hand roll Innocent Chocolate Truffle Balls:
Simply cut into 1 in squares, thaw for twenty minutes at room temp., roll into balls between palms and roll in cocoa powder. Then store in refrigerator until serving. Add a pinch of powdered spices to cocoa powder like ginger, cardomom, or pepper for exotic flavors. Roll in chopped pecans or shredded coconut.Have a truffle rolling party for your teenager's birthday party! Chocolate butter: Some prefer to serve it without chilled dishes and let it soften into chocolate butter by setting near warm stove (79 degrees) so that can be dipped into or spread with a knife. Others melt it down for a chocolate sauce.
